Mastic Flavoured Pudding

Mastic is widely used in Turkey, Greece and certain Mediterranean countries as well as in the Middle East. It is the resin of the mastic tree. This aromatic spice is used to flavour coffee, jam, dairy desserts and certain pastries.

Mastic

  • 6 tbsp butter
  • 2/3 cup flour
  • 2/3 cup sugar
  • 4 cups milk
  • 1 tsp vanilla extract
  • 1/2 tsp crushed mastic

Melt the butter over medium high heat, add the flour and cook for a minute stirring with a whisk. Add milk, sugar and the vanilla extract and continue whisking vigorously to avoid lumps. Once the pudding has thickened, add the mastic gum and mix it with an immersion blender until it looks silky smooth, you could also transfer it to a food processor. This step is crucial for the texture of the pudding.
