Strawberry Coulis
My obsession with strawberries continues with a strawberry coulis. It’s hard to resist making a sauce among other things when you come home with a crate full of strawberries picked at the crack of dawn. The little bit of sugar and lemon juice brings out both the flavour and colour of the strawberries. It looks so vibrant on the plate whether you are serving it with a simple store bought vanilla ice cream or pound cake or with a homemade berry cake like this to bring more berry goodness to a plate.

  • 2 cups strawberries
  • 2 tbsp sugar
  • 1 tsp lemon juice

Wash and trim the strawberries, quarter them, add sugar and lemon juice. Purée and strain, transfer to a jar until ready to use.
