Last year I was feeling a little under the weather right before the final exams and when I mentioned it to my dear friend K. who happens to be a naturopath, she suggested I make this salad. Not only is this salad an immune system booster thanks to the ginger and garlic but it is also delicious! Like her other recipes this became an instant hit in our home. To give this salad a more Asian flavour, you could replace some of the olive oil with sesame seed oil.
- 1 lb. carrots, peeled and grated
- 1 lemon juice
- 1 inch piece fresh ginger, grated
- 2 garlic cloves, grated
- 3 tbsp olive oil
- Black sesame seeds (optional)
Place the grated carrots in a bowl and toss with lemon juice, add the grated garlic, ginger, and olive oil, season with salt. If using, sprinkle with black sesame seeds before serving.
