Valentine Cookies

With Valentine’s Day fast approaching I wanted to make heart shaped cookies. Since I am not a big fan of food colouring, the only option to dress them up was chocolate. They turned out to be a melt in your mouth, flavourful cookie that can be enjoyed with just a cup of coffee or hot chocolate or as an accompaniment to a rich chocolate dessert.

  • 1 stick butter
  • 1/3 cup sugar
  • ¼ cup almond flour
  • 1 ¼ cup all-purpose flour
  • 3 oz. bittersweet chocolate

Mix the butter and sugar in the bowl of an electric mixer until smooth, add the almond flour and all-purpose flour and mix until the dough forms a ball. Wrap with plastic wrap and chill in the fridge for about half an hour. Remove the dough from the fridge and roll to about ¼ inch thick, cut with a heart shaped cookie cutter or the cookie cutter of your choice. Place on a baking sheet lined with parchment paper and bake until the cookies are slightly golden around the edges. Let the cookies cool on a rack. Meanwhile, melt the chocolate over a pot of simmering water or in the microwave. Dip half the cookies in chocolate and place on parchment paper, let the chocolate harden and enjoy.

    Love that look! Could I use more almond flour and less all-purpose flour?

    Hi Marika, thank you for your comment. I prefer to use more nut flours and less all-purpose flour when I bake as well. For these cookies you would have to use some all-purpose flour because the dough is rolled and cut. You could increase the almond flour to 6 tablespoons and reduce the all-purpose flour to 1 cup and 2 tablespoons. Let me know how they turn out. :)

  • I’m with you on the food coloring front. Don’t trust it, prefer to avoid it altogether. So, most of my desserts come dressed in chocolate, like this, or with a simple white icing. However, I will tell you that I recently splurged on some all-natural food coloring (which you can easily find on Amazon). They are expensive, but at least they give an alternative when you want a little color. I’m still learning to use them (and for the price I paid, I treat them like liquid gold), but it’s fun to finally add color to my dessert creations!

    Your cookies look wonderful! One question — can I make “almond flour” by grinding blanched almonds in my food processor?

    Hello, thank you! Yes, you can make almond flour in the food processor but a coffee grinder works better. If you are using whole blanched almonds in a food processor, I would recommend adding a tablespoon or two of all-purpose flour to absorb the oil released by the almonds. Also, I find slivered and sliced almonds are easier to grind than whole almonds. I hope you give the cookies a try. :)

    I made these tonight for my boyfriend who lives far away…i’m baking him an assortment of goods and over-night shipping them for valentine’s day. These came out great! Harris Teeter didn’t have almond flour so I bought almond extract instead….and i put whole raw almonds in the food processor and finely ground them. The cookies look exactly like the picture- beautiful! Thank you for a great recipe.
