Goat Cheese and Chive Filo Bites
My mom was making spinach filled filo parcels and when she ran out of the spinach filling she decided to make these elegant bites to finish the remaining filo dough. As usual, she was able to improvise with great success; she opened a package of fresh goat cheese, added some chives and a pinch of pepper and created these amazing appetizers. I will be posting the recipe for the spinach filled filo parcels but we enjoyed this appetizer so much that I decided to post it first.

  • ½ package filo dough
  • 6 tbsp unsalted butter, melted
  • 10 oz. goat cheese
  • 3 tbsp chives, finely chopped
  • ¼ tsp ground black pepper
  • Parsley stalks, dill stalks or chives (optional)

Preheat the oven to 350F. Mix the goat cheese with chives and pepper, set aside. Cut filo sheets into 6 equal rectangular pieces, brush the first rectangle lightly with melted butter and place another one at a 45 degree angle to the first one, continue with the remaining 4 pieces. Spoon the filling onto the middle of the filo pieces and gather all the sides around the filling. Lightly twist the top and place on a parchment lined baking sheet, bake until golden brown. If you prefer to tie the bundles, you can use blanched parsley stalks, dill stalks or chives.
