Hassleback Potatoes

These potatoes are very simple to make, they take about the same amount of time as regular baked potatoes. The result is a tender flesh with a crunchy exterior. You can add any spice or herb depending on what you are serving with this side dish.

  • 5 medium potatoes
  • 1 tbsp olive oil
  • 2 tbsp butter
  • Garlic, thinly sliced (optional)
  • Salt and pepper
Preheat the oven to 425F. Line a baking sheet with aluminum foil. Wash and scrub the potatoes. Make about 3mm thick slices on the potatoes making sure not to cut all the way through. Mix the olive oil and butter and drizzle over the potatoes, put sliced garlic between the slits if using, season with salt and pepper and bake for about 45 minutes or until the potatoes are cooked.
