Walnut Thumbprint Cookies with Quince Jam

I love how festive thumbprint cookies look but the idea of putting sweet jam on sweet cookie dough was not very appealing. I was talking to a friend the other day and decided to give the thumbprint cookies a try but instead of using regular cookie dough, I made one that has only three tablespoons of sugar. I was happy to see that the result was a melt in your mouth cookie dough combined with crunchy walnuts and sweet, smooth jam. I used my mom’s homemade quince jam to make these dainty cookies extra special but any jam or preserve would work.

  • 1 stick butter (113 grams), at room temperature
  • 3 tbsp sugar
  • ½ tsp vanilla
  • 1 cup walnuts, lightly toasted and finely chopped
  • 1 ½ cups flour
  • 2 tbsp water
  • ½ cup jam
Preheat oven to 350F. Line a baking sheet with parchment paper, set aside. Using an electric mixer, mix the butter with sugar until combined, add the vanilla, walnuts, water and flour. Form into balls and using your thumb or the back of a wooden spoon, make an indentation on the cookie. Bake for about 15 minutes or until golden. Let the cookies cool on the baking tray and spoon the jam.
